Brown versus White Rice

We have been having discussions about, should we offer brown rice only, due to known benefits  brown rice provides as a whole grain.  An article has just been published by USA Rice® Federation identifying the quality of both brown and white rice and benefits to us.  I am enclosing the article for you to read.  Brown and white rice both are important in a balanced diet.

White rice, by law, has to be enriched after milling.  Enriched rice are the primary source of folic acid in women’s diets and other benefits for all are being identified.

We feel that our products, besides being all natural are also providing nutrients which have been documented as good for a balanced diet!

Porcini Arborio

I just wanted to call your attention to the fact that I finally updated the web site , Porcini Arborio information is  included.

A couple of points on Porcini Arborio, it has the least sodium of any our flavors, except Rice Pudding, 300mg.  Also, cooking instructions call for 1 tablespoon of olive oil or butter when you pour the bag into the boiling water.

I might recommend trying the 1 tablespoon of olive oil or butter with our other flavor, except Rice Pudding, also!  Tastes great!!

Arborio Rice Update

June 24th, 2008

Bad news, our 2007 crop of Arborio tested out to dry to mill.  First run through turned the grain to a flour substance.  This happens when the season has been extremely dry which is what happened in 2007.  Maybe the 2008 crop will turn out much better given the rain the farms have had this Spring.

We will have to continue to source our Arborio from farms in Italy for at least another year.  I am hopeful you all will not mind given the excellent quality of rice they supply.

Arborio Rice

We, Barb and I, are leaving for Arkansas tomorrow so that we can watch our supplier mill our Arborio Rice.  It will be terrific to finally get back to USA supplied rice, even though we have been satisfied with the Arborio imported from Italy and hope all of you have been also.

We wanted you to know that we are testing a USA Jasmine Rice supplier from Texas, hoping it will work in our blends, if so we will be back to using exclusive USA rice.

Will keep you posted as we continue striving to bring you the best all natural seasoned rice.

Supplier Change - Jasmine

This is to inform you, our customers that we have to change sourcing of Jasmine Rice from our current SE Missouri farm to Thailand.

Our current supplier, do to global market opportunities, has decided to grow only regular long grain rice. Fox River believes in specialty rice, like Jasmine, provides the most flavor to our Rice Creole, Pepper & Herb and Rice Pudding.

We extensively searched and tested to find a Jasmine rice which delivered parity quality, taste and aroma of our original recipes. We certainly hope you will agree and continue to enjoy our products.

Jasmine Rice - from seed to shelf

As our largest ingredient in Fox River Rice® I wanted to share with you information about our rice. The farm in Southeast Missouri where we purchase our rice uses proprietary seeds, exceptional rice is simply not possible without very careful selection of the cultivars. The Jasmine Rice starts with a variety of Thai Jasmine that delivers a wonderful flavor and more aromatic qualities than any other seed type we know of. Of course, the seeds are all natural and non GMO.

Ideal growing conditions; rice is unique compared to other grains in the high amount of water that is required. The importance and quantity of water is one of the reasons why our growing conditions in Southeast Missouri are ideally suited to producing premium quality rice. The farm’s location is known for the purity of its water and the fertility of its soil.

Slow dried to preserve flavor; unlike most regular rice, our rice is slowed dried using low humidity ambient air. We don’t subject our rice to high levels of heat at any stage of our process. Our smaller, batch processing allows us to dry the rice naturally and slowly.

Never parboiled; most regular rice is parboiled. Parboiling is an extra processing step that exposes rice to high temperatures before milling. This affects both the texture and the flavor. We would rather take extra care and attention in the milling process than subject our rice to harsh condition involved with parboiling.

Gently milled; our farmer’s new milling processes relies on friction to carefully remove the hull of the rice. They carefully screen out anything not meeting our high quality standards. We take pride in the visual appearance of our rice. It looks as good as it tastes!

Packaged to preserve freshness; plastic liners are used on all or our packaging to make sure we protect the quality. In totes from the farm to packaging facility in North Carolina and our pouches to your kitchen, delivering to you the freshest quality we can.

Our supplier does not outsource any part of the rice selection, growing, harvesting or milling processes. Everything is done by him to our exacting standards. Our and his passion is creating the absolute best.

It’s always been food for Barbara and I.

I was born and raised on a farm in the heartland of America, Illinois. My wife of 36 years, Barbara was raised in a farming community close by. We both grew up on home cooking with excellent fresh, all natural ingredients, some right out the side door of our house in the garden.

Fox River Partners is a dream come true for us. After raising our two beautiful children and successfully completing my twenty eight year career with Kraft Foods, Inc., we decided to start a specialty food company. Fox River brand was born out of fond memories of times spent on the shores of the Fox River in Geneva, Illinois enjoying food and relaxing with family and friends. We’ve traveled all over the world in our career and tasted foods and flavors from every region.
